JALAPENO POPPERS

You are gonna LOOOOVE this homemade version of jalapeño poppers recipe that I got from my friend Serena. So fresh tasting, and definitely HOT HOT HOT! Perfect for a summer BBQ, maybe with some icy cold Cerveza. (That's what I'M talkin about!)

Serena's Jalapeño Poppers
(makes 12)
6 fresh jalapeño peppers
2 slices of bacon (or more if desired)
8 oz cream cheese, softened
4 oz cheddar cheese, shredded
dashes of salt, pepper,onion powder and cumin
Panko bread crumbs
4 tablespoons butter, melted

WEAR GLOVES. (You will be sorry if you don't)
Wash the peppers, cut them in half and clean out the seeds and membrane.

(Ok, you can take your gloves off now) Preheat oven to 400 degrees.
Cook bacon and crumble into little pieces.
Mix together the bacon pieces and cream cheese until soft and combined in a small bowl. When smooth add the cheddar cheese and seasoning.

Put a little bit of Panko crumbs in each pepper half. Use a spoon to fill the pepper halves with the cheese mixture, pack it in there tight. Generously sprinkle Panko crumbs on top of each pepper, then pour or brush melted butter over top of each pepper.

Place on baking sheet and bake for 15 minutes, until peppers have wrinkled and Panko topping has browned. Let cool for at least 2 minutes, and enjoy!!!
